The patron Saint of Romania ? Hmmm, you got me on that. It might be St. Andrei (Andrew - english) but I am not sure if there is a patron saint for the whole country.

Bucharest has St. Dumitru (Demeter - english)

The Army - St. Gheorghe (George - english)

The Navy - St. Maria (Mary - english)

The Airforce - ?

I might be mistaken on this one but I think the paratroopers have one too.

The orthodox nations don't consider one saint as patron of the entire nation.
The most important saint for tha nation's history is considered to be the one that initiated the cult on this teritory. For Romanians this is St. Andrew, but he is not considered the most important saint in the religious celebrations.

St. Mary is its patron saint of the Navy. In Romanian the word for "Navy" is "Marina" and the word resembles "Maria" in pronuntion ("Maria" is the Romanian for "Mary"), so the Navy's "birthday" is celebrated on St. Marys day.

St. George (Sf. Gheorghe) is the patron of the Army because he is known as a holy warior, killing the evil dragon (balaurul), so it's a very apropiate symbol for the Army.

Sf. Ilie (English maybe Julius?) is said to controll both tunder and lightning, he's the perfect symbol for the Air Forces.

I don't know the "story" of St. Varvara, maybe "mabadesc" can help us with this.

Well, religion is not one of my strong points, maybe there are some members here who are better informed in this area, I've only told you what everybody knows. I'd really like to find out the story of St. Demeter the New and St. Varvara.

From my memory:
St Demeter the New lived south of the Danube, in Bulgaria, at Basarabov, hence the name. Since childhood he showed a tremendous faith and kindness. It is said that he accidentally stepped in a nest in the forest, destroying several eggs. He decided not to wear a shoe anymore on the "guilty" foot. This is why one of his feet is swollen. He performed several miracles during his lifetime. His preserved body was bought by Romania in the 19th century. The Bulgarians tried to retrieve him and managed to steal his body, but a sudden fog came upon Bucharest and the thieves got lost and were captured.

Every 28 October, huge crowds gather at the Patriarchy for mass and for a chance to kiss his casket and say a little prayer. Many come way before dawn.
