Try: 'Odessa, 1941-1944: A Case Study of Soviet Territory Under Foreign Rule', by Alexander Dallin. Hardcover, 296 pages (May 1998), publisher: Center for Romanian Studies, Rumania. ISBN: 9739839118.

Mind you, it's not a pure description of the military operation to conquer Odessa in 1941, but rather a sociological-historical study, focusing on the post-Oct. 1941 era. However, it's well worth reading it.
